Food Friday - Bar-B-Que Chicken Pizza

It was a busy busy BUSY week. I had to coach a volleyball game Monday and run out to another town right after to play volleyball. We had a game on Tuesday that both Tyler and I had to coach (because when we play 8th and 6th graders separate, he is the 6th grade coach... they love him!!!) and we had a date night after the game. I love date night. Before I move on, I do have to mention that Monday, we won. Tuesday, we played 4 games and each teams won two. But I am taking the win for my girls since when they beat us both games were close and they only beat us by 6 points combined between the two. We beat them by 14. We win!! This means that we are 5-2. That is a solid season that a team is building (and by the way, these parents are getting PUMPED because last year they got excited when the girls got close. Can you imagine what they are like now that the girls are winning??!!)!

Wednesday night Tyler and his boyfriends went grocery shopping for their trip and Thursday morning my sweet husband and his 3 friends went on a fishing trip. I never see any pictures but they always sound like they are having a blast! Since we were home alone, Ann and I went out to a Lia Sophia party for a friend of mine at a local coffee shop then came back to my house to watch Bridesmaids which turned out to be a pretty funny movie! We will see what happens today since it is Friday which means the weekend is (finally) here. If I don't have a friend over, I might make a change to the house which I won't mention on here because I know Tyler reads it. (Surprise, honey!) Kidding. But really, I do get a bit stir crazy when I am home alone for long periods of time.

We take this healthy meal and put a twist on it which makes it not-so-healthy but oh so tasty. This is a relatively good depiction of the outcome, but ours had a little bit more green in it. I found this picture here:

Now this recipe is easy so don't over think it! You need:

2 cups shredded cooked chicken breasts
1/3 cup barbeque sauce (we used about 1 cup)
1 package (10oz) ready to serve pizza crust (12" diameter)
3 roma tomatoes sliced
1 cup shredded monterey jack cheese (we used about 1.5 cups)
FRESH CILANTRO!!! favorite part.

Use a small bowl and mix the chicken and barbeque sauce. Put the pizza crust on a baking sheet and (this is where we cheat make it better) spread a little of that extra barbeque sauce on like a pizza sauce. Spread chicken over pizza and top with tomatoes and your cheese. Bake at 475* for about 10 minutes or until it starts to turn brown. When you take it out, top with LOTS of cilantro. To taste I guess, but I say lots.

This meal took us about 15 minutes to cook as we already had some grilled chicken to work with.

Tyler said I should also add a tuna salad recipe so you guys are getting a "tow-fer"!!!

Here is what you need for tuna salad:

Frozen peas - thawed
RED grapes halved (not any good with green and Tyler doesn't like to chase his grapes which is why we cut them in half)
Brick of colby jack cheese (I tried the pre-cubed ones, not tasty in this dish) cut into small pee-sized cubes
Penne or small shell pasta (I usually use about 1lb but go for two of there's a lot of you!!) cooked and drained
3 cans of tuna per 1lb of pasta (I rinse and drain my tuna otherwise it gets too fishy)
About 1.5 cups Miracle Whip per 1lb of pasta but add until the consistency is right for you (my husband does NOT like Mayo in tuna salad)

Cook and drain pasta, mix in peas, grapes, tuna, cheese, and Miracle Whip. Refrigerate.

I think this one takes a solid 20-30 minutes if you include cutting the mix-ins. Family favorite, ENJOY!
