I was WAY too sick (I had/have a bad cold) to post on Friday, Saturday, or Sunday so here I am. We are going to pretend for a brief moment that right now it is Friday.
I know that I have done a taco-type recipe once before but this one is a HIT! Tyler's mom is fantastic in the kitchen and for one of my bridal showers she gave me an apron that she made (super stinkin' cute) and a cookbook! Not just any old cookbook, but one she hand wrote with her son's favorite recipes! A gift for me AND him really as I love these as well. Here it goes, Taco Pie:
You will need:
1 lb ground beef (brown and drain)
1 pkg taco mix (follow directions on package)
1/3 cup black olives (which I don't love so we only put on half the pie)
2 cups crushed corn chips
1 can of sweet corn
1 cup sour cream
1 pkg crescent rolls
1 cup cheddar cheese
1 cup mozzarella cheese
Heat the oven to 375*. Put the crescent roll dough in a pie plate and form like a pie crust, smoothing all lines. Spread half of your corn chips and corn on the dough. Next, in a separate bowl mix meat and sour cream. Layer meat mixture, cheeses, remaining chips, and if you choose, black olives. Bake for 20-25 minutes and enjoy!
It is rare that we have leftovers because my husband loves it so much, but from past experience, it is good heated up too!
