To mine and my husband's surprise (even though he won't admit he was surprised), they were a hit at my Lia Sophia party and my mom's purse party where I got the most adorable purse.
Moving on. These cookies are amazing. Ever had the cookies from the bakery at Target or Walmart that kind of melt in your mouth? They have a lighter bottom with bright and/or seasonal colors? Here, I will show you:
You will need:
2 1/2 cups unbleached all-purpose flour (which in case you didn't know.... one of my pet peeves is when people spell cooking flour "flower". Just thought you should know =))
1/2 tsp salt
1/2 lb UNSALTED butter (2 sticks) cubed and at room temp
1 1/2 cup confectioner's (powered) sugar
2 tbsp pure vanilla extract
1 large egg
1 tablespoon softened butter
1 teaspoon vanilla extract
2 1/4 cups confectioners' sugar (might need a little more, just keep an eye on the consistency)
3 tablespoons milk
2 drops any color food coloring
Cube butter and (if it isn't room temp) stick it in the microwave for 10-15 seconds
Add vanilla and egg and mix until just combined. Add the rest of the reserved ingredients and mix on low until just combined.
This is where the spritzer part comes into play... but let's skip that part =).
Roll the dough into about 1"-2" balls and place on a cookie sheet about 2" apart. Bake for 12-15 minutes or until golden around the edges.
Yum. Then you frost. In a small bowl, beat the butter, 1 teaspoon vanilla and confectioners' sugar until smooth. Mix in the milk one tablespoon at a time until a good spreading consistency is reached. Stir in food coloring to desired shade. We used about 8 drops of red. Still turned out pink. Decorate cooled cookies, and set on waxed paper to harden.
