Food Friday: Lemon Poppyseed CAKE!

I love food. I love to make it and I love to eat it (but mostly make it). Every Friday I intend to post a new recipe for you to try. I won't post it unless I have tried to make it because I want to know it is good.

Today? Lemon Poppy-seed Cake.

I tried this one because Scott (our very close family friend and best man) said that while he was on a snowmobiling trip, his friend's wife made something that was made of lemon poppy-seed muffins and yellow cake! So what did I do?

I made it.

Now I will warn you: this is borderline INSANE as far as the level of easiness. Seriously, you could do this in your sleep. Mainly because it comes out of a box or a bag.

I will try to make it from scratch in the future with hopefully the same result, but this time (for money's sake... and because I had no idea what I was doing...) I went the easy/cheap route!

My hubby took pictures because he actually did the making while I made supper. I got out the supplies and he went to town. Whattaguy!

You will need:

1 box of yellow cake mix
1 pouch of lemon poppy-seed muffin mix

See, no lie. I used a box/pouch. Shame on me.

Follow the instructions on each package in two separate bowls. Like you are making cake independent from muffins.

Then combine and whisk well before pouring into your (sprayed with non-stick spray) bundt cake pan.

Now baking was tricky. Each has a different temp and time. So I made it up. Turn your oven on to 350* and bake for 60 minutes (aka 1 hour) or until a toothpick comes out completely clean.
Just starting to turn to golden and crack. This = done!

Love this pan. We got it for our wedding from Tyler's cousin!

You can put a glaze on top if you'd like, but it was great without the extra sugar. Yum.
