Food Friday: Steak Burritos

I don't have pictures of this one. I'm sorry, I was scared it wouldn't work out so I was neglectful and weary. Sorry. But this one is GOO-OOOD.

When I was in the great 'ol cheese state last week for work, I was lucky enough to stay with my aunt Larinda. She is maybe the awesomest (no, not a word... but it gets my point across) most amazing aunt ever. She does this thing where she cooks without a recipe (who does that remind you of??) and on Monday night, she made steak burritos. So when I got home (because they were so AH-MAZING) I had to make them for Tyler.

Here is what you'll need:

  • One pound of steak. I think mine was $5/lb. Maybe next time I will go with a more tender option, but I wasn't willing to spend my life savings until I knew it was great.
  • One bottle of Allegro marinade (all I use... it is the most delicious. Ever.)
  • One package of fresh mushrooms
  • One large sweet onion (diced)
  • Large burrito shells
  • Nonstick spray
  • 1 Bag of baby spinach (fresh)
  • Provolone cheese

Heat oven to 350*

Cube the steak into 1"pieces

Shake the marinade and pour into a large saute pan over medium heat.

Place the steak, mushrooms, and onions into the marinate and simmer until meat is cooked and onions soften.

On the soft burrito shell, place (in the center) two slices of provolone. top with some steak, mushrooms, and onions, then finally place a handful of the fresh baby spinach on top.

Take any juice left over and set aside (some people use it as a dipping sauce)

Spray your baking dish.

Fold up (like a burrito... who woulda' thought??) and place in a 9x13 glass baking dish.

Bake for 20 minutes or until they start to turn golden brown.

Serve and enjoy!

Your spinach steams and softens while baking and that with the melted cheese is just fantastic!
