I love food. I love to make it and I love to eat it (but mostly make it). Every Friday I intend to post a new recipe for you to try. I won't post it unless I have tried to make it because I want to know it is good.
I like to think I am a good cook. This was, however, until I realized I can't boil an egg!! Swear to the skies, I cannot boil an egg. I have tried countless times and even (I'm afraid to admit) GOOGLED IT! But It failed.
The yolk always turns all gooey and stuff. Yuck.
So a while back, when my eggs failed and all I had for potato salad was the already peeled and boiled potatoes, I decided to improvise.
I mashed them, and added a lot of stuff.
Here is what you need:
10 medium sized potatoes boiled and peeled
1 (8oz) tub of sour cream
4 tbsp butter
1 cup colby jack cheese shredded
Fresh chives (if you have them)
Grab your good 'ol potato masher and mash away at those spuds.
When they are (relatively) smooth, dump in the butter and mash in till melted.
When butter and potatoes are fully mixed, add sour cream and cheese.
Place in a greased 9x13 pan and bake at 350* for 1 hour.
Remove from oven and serve!
If you need to reheat, just be sure to bake at same temp covered with either foil or the lid to your pan to ensure they don't burn!
**Warning: you might have to make some small modifications as this was (as mentioned) a screw up. I was panicked. The in-laws were coming over and I was not about to have gooey egged potato salad.
