Food Friday - Baked Chicken Strips


Oh yeah... did I mention we find out what we are having TOMORROW?!?!?!?!?!?!?! HOLY MOLY!

Baked Chicken Strips are the "healthy way" to get those strips you loved so much as a child. I LOVE these and know that you will too. I won't buy another bag of Banquet.

You will need:

two medium chicken breasts (thawed)
two eggs
one sleeve ritz crackers
two tbsp garlic 
1/4 tsp salt
1 tsp parsley
1 tbsp grated Parmesan cheese  

Pre-heat oven to 370 degrees.  

Scramble the eggs in a bowl.  

Smush (not a word? Hmm...) crackers and put in a separate bowl.  

Stir garlic, salt, cheese, and parsley into crackers.  

Set off to side.  

Cut chicken breasts into desirable size (remembering that if they're too fat they will take longer to bake). 

Dip chicken strips into egg, then into cracker mix.  (repeat if you want them more crunchy)  

Lay the covered strips onto a baking sheet.  Place in the over for 30 minutes at 370 degrees.  Remove and enjoy!!

This is simple, fun, and will probably cost a LOT less than those bargain brands anyhow.
