Food Friday: Not So Sloppy Joes

I saw this one on a commercial recently and had to try it. The result? SUCCESS! If my husband likes it, it's a win. (You should know, he is picky.)

You will need:

    1 1/2 pounds extra lean ground beef
    1 small onion, diced
    2 tsp minced garlic
    1 cup water
    3/4 cup ketchup
    1 dash Worcestershire sauce
    2 tablespoons brown sugar
    1 teaspoon mustard
    1 1/2 teaspoons salt
    1/2 teaspoon ground black pepper
    1 package Uncle Ben’s Ready Rice (I used white rice for this)
    1 can of prepared biscuit dough. I like the Grands Dinner Rolls that come with 8 per can.

Prepare rice according to package instructions.

 Brown beef, drain fat, mix in all other ingredients including prepared rice.

Preheat oven to 375*

Flatten biscuit dough on greased baking sheet.

Place sloppy mixture on 1/2 of the dough pieces (4 out of the 8) right about in the center, and top with another flattened piece of dough. 

Press down all of the outsides so the goo doesn't ooze (all technical terms here, people).

Bake for 15 minutes or until golden on top and bottom. Serve hot!

Like I said, Tyler loved them too. Win in my book!

Food Friday: Garlic Cheese Biscuits

Welcome back to Food Friday featuring Garlic Cheese Biscuits!

Ever been to Red Lobster where they serve those AH-mazing biscuits? Well you can make them at home, save a few bucks, and not have to sneak the leftovers home in your purse. Win, win, and win.

You will need:
  • 2 cups Bisquick
  • 1 cup shredded cheddar cheese
  • 1/2 cup cold water
  • 1/2 stick butter (I used salted sweet cream butter)
  • 1/2 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/4 tsp dried parsley

Mix water, Bisquick, and cheese until they thicken. Drop spoonfulls onto a greased baking sheet and bake at 375* for 11-12 minutes or until top starts to turn golden.

While those are baking, melt butter and stir in garlic, onion, and parsley.

Remove biscuits from oven and brush the butter mixture on top. Serve warm!

My husband LOVES these!!!

Food Friday - Lasagna

I have never made lasagna and frankly, the idea of making one terrified me. I thought it would be hard and turn out terribly. Well, during a football game, I decided I would leave my husband to his sports and I would go rock the kitchen. This was EASY and turned out DELICIOUS!

Here's what you'll need:

    1.5 pound lean ground beef
    1 large onion, chopped
    1 package of fresh, sliced mushrooms
    1 (28 ounce) jar of traditional spaghetti sauce
    1 (16 ounce) package cottage cheese (you will only use 8oz... so if they have a smaller one... get it)
    1/2 pint part-skim ricotta cheese
    1/4 cup grated Parmesan cheese
    1 egg
    1 (16 ounce) package lasagna noodles (You'll probably use half)
    8 ounces shredded mozzarella cheese

Preheat oven to 350*.
Brown your ground beef (I like to make sure the pieces are relatively small as it makes for easier spreading).

Add mushrooms and onions; saute until onions are transparent. 

Stir in pasta sauce, and heat through.

In a large bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and egg.

Spread a thin layer of the meat sauce in the bottom of a (sprayed) 13x9 inch pan. 

Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used. 

Cover pan with aluminum foil.
Bake in preheated oven for 70 minutes. 

Uncover, and top with mozzarella cheese. 

Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.
